Desafios para a indústria brasileira de alimentos: Legislação sobre segurança de alimentos

O objetivo desta pesquisa é examinar, agrupar e organizar as principais regulamentações brasileiras e literatura sobre segurança de alimentos, destacando os principais desafios para a indústria brasileira de alimentos. Trata-se de uma pesquisa qualitativa, com uso de procedimento específico e uma amostragem intencional para coleta de dados abertos e análise de informações textuais. Os resultados dessa pesquisa demonstram a existência de alguns desafios importantes para a indústria de alimentos, principalmente no que diz respeito aos requisitos genéricos que são aplicáveis à qualquer empresa da cadeia de alimentos, tais como: boas práticas de fabricação (BPF), programas e padrões de higienização operacional (PPHO), identificação e análise de riscos de contaminação e sistema de análise de perigos e pontos críticos de controle (APPCC).
